Manuel Lupe Rios Sr., a native Dallas, Texan, a retired US Army veteran with 27 years of service, and an official Kentucky Colonel who takes pride in his family cuisine traditions. Son of Esteban Rios, the chef who pioneered a Tex-Mex cuisine that has been very successful in the Dallas-Ft Worth area. Manny offers a more personable Tex-Mex experience. October 31, 2005, just five months after its grand opening, Manny's Uptown was recommended by The New York Times as 1 of 2 restaurants in the entire DFW Metroplex for authentic Tex-Mex food and places to see in Dallas Fort-Worth.
